Paleo Chocolate Cups

Easter was on the way, I was finishing my Paleo March AND Future Husband and I had a friend from out of town coming for Easter – so a decadent dessert was in order. And I was hung up on the idea of chocolate since there’s god damned chocolate EVERYWHERE for Easter!!!

So I decided on making these wonderful little cups of joy:

Paleo Choco-Coconut Cups

Adult Easter bunny treats, no complaints here!

This made 6 ramekins of Paleo Chocolate Cups for me, I would suggest putting them in the smallest dessert serving dishes you have on hand because this dessert is certainly rich! I might even use a bit less chocolate next time for a creamier result, but if you prefer a chocolate mind explosion, go nuts!

I have to credit NomNom Paleo for this recipe, I’ve just made mine a non-spicy version :)


  • 200 grams of 70% Dark Chocolate OR higher, finely chopped
  • 1 can of coconut milk
  • 2 egg yolks
  • 1 tsp cinnamon
  • 1/2 tsp all spice
  • pinch of salt
  • 1 tbsp vanilla


  1. In a saucepan whisk yolks and coconut milk together over medium low heat
  2. Mix and watch carefully as everything heats up! Add cinnamon, salt and all spice. Whisk more
  3. Once it thickens, nearly the consistancy of a light custard REMOVE FROM HEAT. Do not let it simmer. Steaming is OK, means it’s close or already done.
  4. Have chopped chocolate ready in a bowl. Pour coconut milk mix slowly over chocolate. DO NOT MIX YET. Cover and let sit for 5 Minutes or so.
  5. NOW you can mix it together, slowly so the heat from the coconut milk can melt the chocolate properly.
  6. Add vanilla, mix a little more.
  7. Pour into ramekins, cover with saran wrap and store in the fridge for at least 3 hours.
  8. Serve with Coconut Whipped Cream (Put can of coconut milk in fridge, use hardened top layer and add honey and vanilla. Mix using mixer, voila Paleo whipping cream!)

I also tried making a Banana Whipped Cream using a mashed banana, whipping cream and vanilla. It was difficult to make the consistency thick like regular whipping cream, it tended to stay flat BUT I put a layer on a Choco cup and left it in the fridge overnight AND it firmed up really nicely. Just an idea for you to try something different, banana and chocolate just go so well together!
