Gluten Free Cobbler Recipe

With right now (September) being the last kick at the can for fresh fruit, I found myself with an overflow of peaches and nectarines (my favourites!). So what better than to make dessert out of them!

Piece of Gluten Free Cobbler

This is one I made with blueberries and nectarines, turned out very well!


For a square baking pan, you’ll need:

2 1/2 Cups of sliced, ripe peaches

1/2 cup of brown sugar

1 tsp cinnamon

1/2 tsp nutmeg

1/4 Cup of melted butter

1 Cup of Gluten Free Flour Mix ( I used Robin Hood)

1 tsp baking powder

1/2 tsp salt

1/2 cup of white sugar

3/4 cup of milk

1 egg


Preheat oven to 375

Pour half of melted butter into pan. In a bowl combine peaches with brown sugar, cinnamon and nutmeg. Set aside.

In separate bowl combine gluten free flour blend, baking powder, sugar, salt, milk and egg. Whisk together, should have a similar consistency to pancake batter, maybe a bit thicker. Pour 3/4 of the batter into baking pan, pour peach + sugar mixture on top, and top off the cobbler with the last of the batter.

Bake for 45 minutes to 1 hour. Serve warm with whipping cream, ice cream, whipped coconut milk, whatever you like!

Also experiment with different fruit, I made a nectarine and blueberry version for a family dinner and it was a major hit!

Paleo Chocolate Cups

Easter was on the way, I was finishing my Paleo March AND Future Husband and I had a friend from out of town coming for Easter – so a┬ádecadent┬ádessert was in order. And I was hung up on the idea of chocolate since there’s god damned chocolate EVERYWHERE for Easter!!!

So I decided on making these wonderful little cups of joy:

Paleo Cocoa Balls

These are a staple in my house, an excellent go to treat that’s not too bad for you.

Paleo Cocoa Balls

They may look harmless, but once you try one EVERYTHING changes.

These were a major hit for my non-paleo family, and they now make them at home about once a month. Quick and easy to throw together when your sweet tooth just will not rest!


  • 2 cups of shredded coconut
  • 1/2 cup of cocoa powder
  • 1/4 cup of raw honey or agave syrup
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 cup melted coconut oil
  • pinch of salt


  1. Pre-Heat oven to 350 C
  2. Get a bowl
  3. Put all above ingredients in the bowl. Mix them together with a whisk or mixer, it should form a fairly thick ‘dough’.
  4. Get out a baking sheet, form 1 inch-ish sized balls using your hands. Place them on baking sheet about 1 inch apart.
  5. Bake for 10 mins.
  6. Remove your creations from the oven, let them cool on a plate. Store in the fridge or freezer so your coconut oil does’t get away from you.

Makes about 10 balls. So so so easy to make aka very dangerous!
